There was some question earlier on whether or not he would ever make it all the way back from his knee problems. Probably why he isn't in there.

College Draft info is in the game:

After the regular season has completed, select the "Players" menu, then select "College Draft". This will list all the prospects available in the upcoming draft.

Box scores are in the game:

Select "News" menu, then select "Game". Hit the "Recap" button.

Thats the "recap" I want the Box score, I'd like to know how many rushes for how many yards my HB had, not how many "total yards".

Unless Box scores just don't exisit in the Demo version for some odd reason.

this is possible even without it, look at how many he had after the first week in the main offense menu than add & subtract the differences in each subsuqent week, takes some simple math but not too bad.
